Cooking Tip # 14

When a recipe calls for white wine in the sea scallop scampi, DO NOT UNDER ANY CIRCUMSTANCE, substitute red wine. If you don't have any white wine, just leave out the wine all together or dinner will turn out FRIGGING DISGUSTING! YUCK!!!!!

Hmm what happened to it? I hardly ever cook with wine so I would have made that mistake for sure!

The red wine completely over powered the delicate flavor of the scallops. Turned them red too. My experience says that you can take a chance and substitute white wine for red, but not visa versa, as I discovered tonight. But never the other way around.
